Drain and rinse the chickpeas and pour them into a large bowl. Slice the celery and onions into thin slices, about ?-inch thick.
Mash the majority of the chickpeas with a fork. Add the celery, onions, capers, tahini and mustard to the bowl and stir well.
Scoop equal portions of the mixture into each lettuce leaf. Serve or store for later.
