Heat a large pot. While it's heating, chop the onion. When the pot is hot, add the oil and onions and cook until they start to turn clear.

Add the ginger and garlic and cook. Throw in your spices and stir it up. Let it cook for a few minutes, until fragrant.

Stir in the tomato sauce and coconut milk. Bring it to a boil. Add the chickpeas and reduce it to a simmer for 20 minutes, stirring occasionally.

Fold in the spinach and let it wilt. . If you keep gently stirring, it doesn’t even need to be on the heat.
