Homemade Sloppy Joe Recipe

One-pan classic sloppy joes made healthy! A great make ahead for lunch at work or leftovers.

Ingredients

– Chopped Carrots – Chopped Red Bell Pepper – Avocado Oil – Large Garlic Cloves – Ground Beef – Tomato Paste – 100% Whole Wheat Sandwich

ADD

Peel and chop the carrots, onion, bell pepper, and zucchini into ¼-inch pieces. Heat a large skillet. When hot, add the oil and carrots.

COOK

Cook for 4 minutes, stirring once halfway through. Chop the garlic. Add the onion, bell pepper, zucchini and garlic to the skillet.

MIX

Cook for 4 minutes, stirring once halfway through. Mix together in a bowl the tomato paste, ketchup, sugar, Worcestershire and water.

ADD BEEF

Add the beef to the skillet and increase the heat to medium. Break the meat apart as it cooks and cook it through.

SERVE

Add the sauce to the skillet and stir. Let it cook for 2 minutes. Turn the heat off and salt. Scoop 1 cup of filling on each sandwich thin.
