Why Coconut Lemon Fat Bombs?
Fat bombs are a huge trend but I found that a lot of the recipes are basically a simple cheesecake or just cream cheese and sweetener. Personally, I don’t want to bite into just cream cheese, sugar and perhaps another flavor, so I made what I would eat as a fat bomb.
Lemon and coconut are such a good paring and what I like about these is that they’re completely guilt free, they’re just sweet enough to satisfy, and they’re perfect for cleansing the palate.
Often times when you eat something sweet, the lingering tastes bring more sweet cravings. Well, because these fat bombs also cleanse the palate (the lemon) and are sugar free, the end result is a clean and completely satisfying bite.
Gestational Diabetes Diet
These fat bombs are great for the diet because they are low carb, have no white sugar and have fat and protein.
You can swap the mascarpone for cream cheese. If bananas don’t work for you, you’ll have to use an alternative sweetener to your desired amount, but you’ll also have to add in a liquid component to get the wet sand texture needed to roll into balls. This could be as simple as adding water, but the flavor will be diluted.
If you coat the fat bombs in coconut flour, do it very lightly so they don’t become chalky and overly coconut-y.
You can swap some of the coconut flour for protein powder. That would make these more balanced/safe to have as a snack. But because coconut flour is so absorbent, you’ll have to add more protein powder until you reach a wet sand consistency that will roll nicely.
If you the mixture is crumbly, add a little lemon juice or water at a time.
I’ll say it again, coconut flour is a great substitute for all purpose flour while you have gestational diabetes. It’s equal to almond flour in carbs and protein, but has less fat. What I like most about it is that it gives a texture most like all purpose flour in cakes, muffins, etc. It’s so absorbent that it requires very little, making it last a long time. But if you purchase a bag, I promise to give you enough recipes to use it all.

Coconut Lemon Fat Bombs
- 1 each Medium Banana
- 3/4 t Fresh Lemon Juice
- 2 Tbsps Mascarpone or Cream Cheese
- 5 Tbsps Coconut Flour
- Mash the banana, mascarpone and lemon juice well in a bowl with a fork. Small lumps are ok.
- Add the coconut flour and mix well (by hand). The mix will pull from the sides of the bowl.
- Scoop 2 Tbsps at a time and roll into a ball by hand.
- Optional – Roll the balls in powdered sugar or coconut flour; just enough to coat them. Zest the lemon peel over the top just for decoration.
